Another one of my goals for 2018 is to make myself like hard-boiled eggs. I know this doesn’t sound like a typical New Years’ Resolution, but I’m being 100 percent serious.

I hate hard-boiled eggs. The texture grosses me out and thinking about biting into one makes me want to gag. Don’t even get me started about the smell.

As someone who loves eggs in all other forms, I want to conquer this fear. I’ll eat eggs scrambled, sunny-side up, fried or over easy. I love quiche, frittatas and omelettes.

I appreciate eggs for their nutrition, and hard-boiled eggs are a great way to eat eggs on the go. They serve them at dining halls, and you don’t even have to peel them.

On the second day of the new year I was babysitting, and the kids asked for hard-boiled eggs. I decided to try one as well. The first hard-boiled egg of 2018! Hurrah!

But after about one and a half bites I had to throw it away. Despite sprinkling it with pepper, I still couldn’t stomach the hard-boiled egg.

My pediatrician once said you have to try something twelve times before you know if you like it. So I’ll keep trying, and maybe by next December I’ll overcome my aversion to hard-boiled eggs.
